Made salsa and bottled tomatoes last night with my wife; almost as much fun as bottling peaches, if you know what I mean. The salsa tastes great -- we'll be lucky if the 26 bottles last until Christmas. And I love bottled tomatoes: salt, pepper, onion salt, and some onions; they are great with a tuna sandwich. That was a staple meal at my house as a kid.

I can see with the tuna reference this thread is already headed down the same path as your peaches one.
